Ingredients
Wontons
30 wonton wrappers
30 cherries (sweet)
100g cream cheese
20g icing sugar
To Cook
Oil for deep frying
To Serve
20g icing sugar
200g Ice Cream of your choice (optional)
Method
Wonton Filling: Mix the cream cheese with a the icing sugar in a bowl so that there is no lumps, Remove the stone from the centre of the cherries, try to keep them joined at the sides. Lay the wontons out on a clean surface, place a cherry in the center of each one and then place half a teaspoonful in the centre of each cherry where the stone was. Dampen the sides of the wontons with water and gather together its corners giving it a small twist at so as to secure it.
To Cook: Heat some oil in a deep fryer, wok or large saucepan to 180C. When a wonton is placed in it, it should become crisp and golden and rise to the top. Cook the cherries in the oil 5 at a time for a couple of minutes, they should be crisp and golden, drain them on paper toweling and keep warm until ready to serve.
To Serve: Place generous spoonfuls of the ice cream in the center of 6 bowls and place the 5 wontons around the edge of each bowl. Dust the wontons with icing sugar and serve. The cherry wontons also make a brilliant sweet canapé.
