Tiramisu Tower

This strictly isn't a tiramisu the famous Italian dessert but is based on it with its coffee flavour and Italian biscuits. I must confess to not being a fan of the traditional tiramisu but love the flavours it is made up of and here I use these to make a very quick but delicious and impressive dessert.

Ingredients

Tiramisu Tower

  • 42 Italian sponge biscuits
  • 120g strong coffee
  • 120g coffee liquor e.g. Tia Maria
  • 240g mascarpone
  • 120g double cream
  • 60g icing sugar
  • 30g cocoa powder
  • 100g continental plain chocolate (70% cocoa solids), shavings

Method

  1. Preperation: Mix the coffee and coffee liquor together.
  2. Place the cream and mascrapone into a bowl and sieve over the icing sugar and mix it in until well combined.
  3. To Serve: Place 3 biscuits in a aquare into the centre of 6 plates. Stack 4 more biscuits along the lengths of each side. Drizzle 1 1/2 tablspoons of the coffee mixture over the biscuits. Top each serving with a couple of tablespoons of the mascrapone. Dust the mascrapone with the cocoa powder and spinkle over the chocolate shavings. Serve.
