Grilled Peaches with Waffles ready to eat

Peaches are always popular in our family, and this recipe combines their love of Peaches with the love of Waffles.

Ingredients

Peaches

  • 6 Peaches, sliced in half and stone removed
  • 6 tbsp (heaped) muscovada sugar

To Serve

  • 6 large scoops of good quality vanilla ice cream

Waffles

  • 300g self raising flour
  • 3 eggs, seperated
  • 100g caster sugar
  • 300ml milk
  • pinch salt

Method

  1. Peaches: Preheat a grill to moderate-high. Place the peach halves on a grill tray. Sprinkle a half a tablepoon of sugar over each peach and place them under the preheated grill.
  2. Cook the peaches for around 5 minutes until the sugar has melted and the peaches are slightly brown.When they are ready remove them from the heat and keep them warm until ready to serve.
  3. Waffles: Preheat a waffle machine. Sift the flour into a bowl and add the caster sugar and salt. Make a well in the centre of the flour and add the egg yoks and miilk and melted butter to it and mix it into the flour until you have a smooth batter. In a seperate bowl whisk the egg whites until they form stiff peaks. Add half of the egg whites to batter and fold it in with a metal spoon, then fold in the remaining egg whites. Pour around a sixth of the batter mixture on one half of a waffle iron and spread it out with a wooden spoon so that it coats it well. Place the half of the waffle iron over and leave it to cook for a couple of minute. When it is ready turn it out and keep it warm while you prepare the remaininf waffles.
  4. To Serve: Serve the waffle whole or in cut into sections onto 6 serving plates. Place two peah halves in the centre of each plate. Place a generous scoop of vanilla ice-cream beside each seving of peaches. Dust the waffles with icing sugar and serve.
