Fried Green Tomatoes

Summer brings an abundance of tomatoes and this includes those slightly sour green tomatoes. Good quality green tomatoes are delicious, they make an excellent chutney and are good in salsas. Crispy fried green tomatoes are excellent especially when they are accompanied by a little sour cream.

Ingredients

Fried Green Tomatoes

  • 6 green tomatoes, sliced
  • 50g rice flour
  • 25g plain flour
  • smoked paprika
  • maldon salt and freshly ground black pepper
  • 2 eggs beaten
  • 200g dried bread crumbs
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • oil for deep frying

To Serve

  • sour cream
  • or creme fraiche

Method

  1. Green Tomatoes: Place the flour in a bowl or on a plate mixed with the smoked paprika and season it with plenty of salt and pepper. Place the eggs in large bowl. Place the breadcrumbs in a large bowl or on a plate and mix in the dried thyme and oregano.
  2. Coat the green tomatoes in the flour then the eggs and finely the bread crumbs, shaking off any excess crumbs.
  3. To Cook: Heat some oil in a deep fryer, wok, or deep saucepan to 180°C. Deep fry a few slices of tomatoes at a time for 1-2 minutes until they are golden. Place the cooked tomato on kitchen paper and keep them warm while you cook the rest of the tomato slices.
  4. To Serve: Serve fried green tomato slices with plenty of sour cream of creme fraiche.
