Mulled wine is a warming and aromatic winter drink which is excellent when served with mince pies on a cold winter evening.

- 1 bottle of light to medium bodied red wine
- 1 orange, sliced
- 1/2 a lemon, sliced
- 6 cloves
- 1 stick of cinnamon
- 2-3cm piece of ginger (optional)
- 3 tbsp brandy
- Mulled Wine: Stud the lemon and orange slices with the cloves. Place all the ingredients in a saucepan and bring it to the boil then reduce it to a simmer for a couple of minutes. Remove the mulled wine from the heat and allow it to cool slightly before serving.
- Serve the mulled wine in red wine glasses if it is to dry stir in a couple of tablespoons of sugar into the mulled wine. Serve the mulled wine on it own or with mince pies or Christmas cake.
