Lime and Honey Glazed Brussel Sprouts

For those, whom the thought of brussel sprouts is an abhorrent, the idea that there are diffent recipes to cook the things must be strange! Well, all I can say is give this recipe a go and you will become a brussel sproutphilia.

Ingredients

Brussel Sprouts

  • 36-48 small brussel sprouts, washed, trimmed and small cross cut into the bottoms
  • 4 tbsp butter
  • 1 garlic clove, crushed
  • zest of and juice of 1/2 a lime
  • 6 tbsp honey
  • maldon salt and freshly ground pepper

Method

  1. Brussel Sprouts: Bring a saucepan of water to the boil. Place the brussel sprouts in the boiling water and allow them to simmer for 5-8 minutes until just tender. Drain them and set aside.
  2. Melt the butter in a saucepan over a moderate heat, add the garlic, lime zest and juice and honey, leave to cook them for 1 minute. Increase the heat slightly and add the brussel sprouts to the pan, toss them so that they are well coated. Season with a little salt and pepper. Serve or keep warm until ready to serve.
