A Selection of Cheese Wonton's

Wonton's are one of the most useful ingredients to have in your freezer. Not only can you prepare numerous Chinese dishes but you can also use them instead of pasta for ravioli and for hundreds of modern fusion style dishes steamed, boiled and fried. Cheese Wonton's are very easy and economical to prepare you can vary the cheese to your own taste. The Wonton's can be prepared and frozen and simply defrosted for an hour before cooking. Wonton's can be purchased from Chinese food stores in the fridge and freezer.

Ingredients

Cranberry and Brie Wonton's:

  • 200g brie, cut into 30 small pieces
  • 50g cranberry sauce
  • 20 Wonton's

Walnut and Stilton Wonton's:

  • 200g stilton or a similar blue cheese
  • 50g small walnut pieces, toasted
  • 20 Wonton's

Goats Cheese

  • 200g soft goats cheese
  • 1 tbsp chives finely chopped
  • 20 Wonton's

To Cook

  • oil for deep frying

Method

  1. Cranberry and Brie Wonton's: Place the wonton skins out on a wooden board. Place a small piece of brie in the centre of each wonton and top with a little cranberry sauce. Lightly dampen around the edges of the Wonton's and bring all the edges together and give them a small twist so as to seal in the cheese. Store the Wonton's on grease proof paper, covered in a single layer in the refrigerator or freezer.
  2. Walnut and Stilton Wonton's: Prepare as for Cranberry and Brie placing a little stilton on each wonton topped with a walnut piece.
  3. Goats Cheese: Mix the goats cheese with the chives in a bowl and prepare Wonton's as above placing half a teaspoon of goats cheese in the centre of each wonton.
  4. To Cook: Preheat oil in a deep fryer or wok to 180-190°C (to test that the oil is ready place a small cube of bread in it, which should rise to the top and be crisp and golden after a few seconds). Cook a few of the Wonton's in the oil at time until they are crisp and golden. Remove the Wonton's from the oil and drain them on kitchen paper. Keep the Wonton's warm while your repeat this process with the remaining Wonton's Serve. The Wonton's can be kept warm in a low oven for up to 30 minutes before serving.
  • To identify the different Wonton's you can garnish them eg. tie chives around them, cooked noodles can be tied into bows around the Wonton's before deep frying or garnish the top of the Wonton's with herbs eg. chervil, flat leaf parsley etc.
