Aioli is simply a flavoured mayonaise and is very easy to make. Serve it as an accompaniment to seafood dishes or as a dip.
Portions: Makes 300g
Preparation: 5 minutes
- 2 garlic cloves, crushed
- 3 egg yolks
- 1 tbsp parsley, finely chopped
- pinch maldon salt
- 300ml olive oil
- Garlic Aioli: Place the garlic, eggs, saffron and salt in a food processor and process it until just blended. While the motor is still running slowly, add the olive oil until you have a mayonnaise consistency. Serve at once.
