Muesli

This is an exceptionally easy recipe but none the less delicious. It is also far less costly than purchasing packaged varieties. Once you have the knack you can vary the quantity and types of nuts and dried fruits to suit your own taste.

Ingredients

  • 300g oats
  • 50g desiccated coconut
  • 100g sunflower seeds
  • 120g almonds
  • 120ml apple juice
  • 30ml cold pressed rapeseed oil
  • 120g sultanas

Method

  1. Preheat an oven to 160C.
  2. Place all the ingredients except the sultanas in a bowl and mix until well combined. Pour out onto an oven tray and spread out evenly. Place in the preheated oven and leave to cook for 45 minutes, until dry and lightly toasted. Stir regularly to allow the ingredients to cook evenly.
  3. When toasted remove from the oven, stir in the sultanas and leave to cool. When cool store in a sealed container until ready to use. Will keep for up to a month.
