Thyme Limoncello

Limoncello is a famous Italian liqueur which is infused with lemon zest and sweetened with sugar. The addition of thyme to the recipe adds an underlying depth to this decadent drink. When ready store the Limoncello in the freezer and serve directly from there in shot glasses.

Ingredients

  • 8 unwaxed lemons, zest white pith removed
  • 8-10 sprigs of thyme
  • 750ml vodka
  • 350g caster sugar
  • 350ml water

Method

  1. Place the lemon zest, thyme and vodka in a sterilised bottle. Store in a cool dark place for 2 weeks shaking the bottle on a daily bases.
  2. Place the sugar and water in a saucepan over a moderate heat and slowly stir until the sugar is dissolved. Bring to the boil, then reduce to a strong simmer for 5 minutes. Remove from the heat and allow to cool.
  3. Strain the infused vodka through a muslin lined sieve into a jug or bowl. Discard the lemon zest and thyme. Stir in the cooled sugar syrup until well combined. Pour the limoncello into sterilised clear bottles. Place in a cool dark place for 2 weeks to develop. After this time the limoncello is ready to drink, store in the freezer and serve cold straight from the freezer.
