This easy to prepare, and very tasty coleslaw is very quick to prepare
and make. I think of it as a very much grown-ups coleslaw, reminiscent of a Waldorf Salad.

Ingredients
Coleslaw
1 small red cabbage, thinly shredded
2 large crisp apple, decoder and sliced into thin julienne/matchsticks
150g walnuts, toasted and roughly chopped
5 spring onions (green onions, scallions), trimmed and finely chopped
150g stilton crumbled
1 lime juice and zest
75ml extra virgin olive oil
Maldon salt or similar quality salt
Ground Black Pepper, course
Method
To Prepare: Place all the ingredients in a large
bowl and toss lightly until all the ingredients are well distributed,
season with salt and pepper to taste. Serve.
