Traditional Guacamole

A traditional guacamole with plenty of kick. The great thing about this recipe is that you can increase the kick with extra Tabasco, or you can make it very mild for those spice virgins.

Ingredients

Ingredients

  • 3 ripe avocados
  • 2 spring onions, trimmed and finely chopped
  • 2 small green chilli, finely chopped (if you like it milder, remove the seeds)
  • 3 tbsp finely chopped coriander
  • 100g cherry tomatoes or baby plums, cut into 3 to 5mm dice
  • juice of 1 lime
  • dash tabasco
  • generous pinch salt

Method

  1. To prepare: Halve the avocados, remove the stone, scoop out the flesh and roughly chop. Place the avocado in a bowl squeeze over the lime juice and mash roughly with a fork. Gently stir in the remaining ingredients so that they are well distributed.
  2. Serve or cover with cling film and refrigerate (stir the guacamole before serving as the top of it can discolour.)
