Green Beans with Garlic and Tomatoes

Ingredients

  • 300g stringless green beans, washed and trimmed
  • 2 tbsp olive oil
  • 1 garlic clove, finely chopped
  • 1 large tomato, finely diced
  • maldon salt and freshly ground pepper

Method

  1. Beans: Bring a saucepan of water to the boil and place the beans in it and leave them to simmer for a couple of minutes until just cooked. Drain the beans.
  2. Heat the olive oil in a saucepan over a moderate heat add the garlic and allow it to cook for 30 seconds. Stir in the beans and tomato concasse, season with a little salt and pepper. Serve hot or cold.
