Samphire with a Miso Dressing

Samphire, an eatable plant that grows on sea cliffs and salt marshes is similar to very fine asparagus, and has a common name of sea asparagus. Its name comes from the corruption of Saint Pierre.

Samphire is salty and crips to eat. It can be eaten raw in a salad, but I prefer it briefly steamed for 1-2 minutes.

  • 200g samphire, rinsed thoroughly

Miso Dressing

  • 1 tbsp miso paste
  • 1 1/2 tbsp rice wine vinegar
  • 1 tbsp ginger, finely chopped
  • 1 tsp sesame oil
  • 1 tsp toasted sesame seeds
  • juice of 1/4 lime

Method

  1. Dressing: Place all the dressing ingredients in a jar and shake until well combined.
  2. Samphire: Steam the samphire over boiling water for 1-2 minutes. Place the samphire in a bowl and toss with well shaken dressing. Serve.
