Ingredients

Spinach

  • 100g raisins, soaked in water for 20 minutes
  • 1 kg spinach leaves
  • 100g pine nuts
  • 4 tbsp olive oil
  • pinch nutmeg
  • salt and pepper

Method

  1. Spinach: Trim the spinach and rinse it in plenty of water. Place the spinach in a large saucepan with excess water form rinsing, cover the pan and place it over a moderate high heat. Cook the spinach for 3-5 minutes until the leaves are wilted. Remove the spinach from the heat and drain it, rinse the spinach in plenty of cold water. Squeeze out the excess water and chop it finely. Set the spinach aside until ready to cook.
  2. To Cook: Heat the oil in a large saucepan over a moderate heat. Add the spinach, pine nuts and raisinsto the hot oil and reduce the heat. Cook the spinach for a 3-5 minutes until heated through. Season the spinach with a little salt and pepper and stir in the nutmeg. Serve
