Anzac Biscuits

Anzac Buscuits, just great with a cup of tea or coffee

These buscuits celabrate the great sacrifice New Zealand and Australian troups made in the Great War. They are very popular in both countries, and once you've made them you will understand why!

Ingredients

Anzac Biscuits

  • 150g rolled oats
  • 50g desiccated coconut
  • 150g caster sugar
  • 150g plain flour
  • 2 tbsp golden syrup
  • 125g butter
  • 1 tsp bicarbonate soda

Method

  1. Preheat an oven to 180°C. Melt the butter in a saucepan with the golden syrup. Place the bicarbonate soda to 2 tbsp of boiling water. Stir into the melted butter and golden syrup.
  2. Place the oats, coconut, sugar and flour into a bowl. Make a well in the centre and pour in the melted golden syrup and butter. Mix with a wooden spoon until well combined.
  3. Place tablespoons of the mixture onto a greased tray, around 3cm apart allowing them to spread out.
  4. Place the biscuits on the centre shelf of the preheated oven and cook them for 10-15 minutes until light golden.
  5. Remove the biscuits from the oven and allow them to cool for 5 minutes then place them on cooling rack.
  6. Store the biscuits in an air tight container.
