This would have to be my very favourite of African cooking as it follows through the many regions of African cuisine with clear explanations of the dishes and cuisine. Jessica B. Harris is a food historian and author who in this book explores her countries cuisine with passion.
This isn't a glamorous book, it is a book of the food prepared in the homes through out Africa with its many diversities. Recipes include spicy barbecued dishes such as "Prawn Pili Pili", stews, and Moroccan tajines, alongside Creolean dishes including gumbos. The recipes are clearly written and laid out, with information on the dishes origins and variations.
This is a brilliant book for anyone who wants to study African cuisine and its history and of course loves to cook.
