Matt Moran is the Head Chef of the Aria restaurant, which overlooks the famous Sydney Opera House. His fame has allowed him to travel the world to both learn and teach cookery. His book, the self titled Matt Moran, is his way of introducting a wider audience to his passion for honest food.
The book covers the full range of dishes, from canapés to desserts, with both simple and more complex recipes. The photos that accompany the recipes are mouthwatering and beautiful; showing the food in a manner that won't intimidate the reader, but, instead, giving them a way to best present their dishes once cooked.
It is hard to pick just a few recipes to list, but here are some of my favorites. In the canapé section, I like Tuna Tops with Red Curry Dressing and the Moroccan Grilled King Fish. The Meat section has a wonderful Poached Lamb Loin with Basil Mousse and Lentils, which has the most mouthwatering image.
This is a lovely book, full of excellent recipes and an introduction that is not about self praise, but lets us understand why he has such a passion for food. It gives us an insight into Matt Moran's 'food' mind and is one of those essentials for your cookery book collection.
This book is a bit slow to make its way from Australia, so check to see if it is available at Amazon and other on-line retailers, and be patience for this book is worth the wait.
