Cranberry and Port Sauce
500g cranberries
300ml port
200g caster sugar
Method
Cranberry and Port Sauce: Wash the cranberries and place them in a saucepan with the sugar and port and leave to cook for the 10 minutes over a moderate heat, stirring regularly so as not to burn the bottom of the pan. The cranberries should collapse, the sugar dissolve and the port reduce so that you have a sweet thick sauce. Remove it from the heat and allow to cool. Refrigerate in a covered container until ready to serve. The Sauce will keep for 10 days.
