Ice Cream Florentines with a Raspberry Coulis

A very easy dessert to prepare that relies on only 3 ingredients. Most supermarkets sell raspberry coulis in jars in the refrigerator section but if you can't find it you can purchase canned raspberries and puree them with a little of their syrup. You can vary the flavour of the ice cream according to your taste.

Ingredients

Ice Cream Florentines

  • 8 Florentine or brandy snap biscuits or a similar flat biscuit
  • 100g strawberry ice cream
  • 100g vanilla ice cream
  • 4 tsp of canned raspberries preferably in fruit juice (if you have been unable to purchase raspberry coulis, puree the remaining raspberries for coulis)

To Serve

  • 3 tbps raspberry coulis
  • icing sugar
  • 1 love heart stencil (cut a love heart shape from paper so that it fits on the biscuits), optional

Method

  1. Ice Cream Florentines: Remove the ice-cream from the freezer a few minutes before preparing. Place a generous scoop of strawberry ice cream on one Florentine biscuit, flatten out the ice-cream and place a teaspoon of the raspberries on it, then place another biscuit on top, sandwiching the ice cream in, smooth the sides with a knife. Make one more strawberry ice-cream sandwich then two vanilla, so that you have 2 strawberry and 2 vanilla ice cream Florentines. Wrap them in cling film and place them in the freezer to set for 10 minutes or until you are ready to serve them.
  2. To Serve: Place one vanilla ice cream Florentine in the centre of each plate. Place the love heart stencil on each of the strawberry ice-cream sandwiches and dust with icing sugar (optional). Lean the strawberry ice cream Florentine against the vanilla ones. Drizzle the raspberry coulis around the plates and serve.
