Fine Noodles with Smoked Salmon, Caviar and Creme Fraiche

This is a very attractive dish which is true simplicity to prepare, while using indulgent ingredients. In this recipe I call for the commercial variety of quick cook noodles, which are available in nearly all supermarkets.

Ingredients

Smoked Salmon Noodles

  • 150g easy cook noodles
  • 1 tbsp butter
  • 6 tbsp creme fraiche
  • 100g smoked salmon, sliced finely
  • 2 tsp caviar
  • 1 tbsp dill leaves
  • 1 tbsp chervil leaves
  • freshly ground black pepper

To Serve

  • 2 tsp creme fraiche
  • 2 tsp caviar
  • 2 dill, sprigs

Method

  1. Noodles: Bring a saucepan of water to the boil. Add the quick cook noodles and cook them for 3 minutes or as directed, so that they are just cooked. Drain them lightly, so that they are still wet. Return them to the saucepan off the heat. While the noodles are still hot add the butter and toss it so that it melts and coats the noodles. Then Stir in the creme fraiche, followed by the smoked salmon, caviar, dill, chervil and pepper to taste, lightly toss the noodles so that the ingredients are well distributed. Serve.
  2. To Serve: Twist the noodles on a carving fork or large fork and place the noodles in the centre of each plate. Place a sprig of dill on the top of each serving, followed a generous teaspoon of creme fraiche and finally the caviar. Serve
