While the ingredients of this tapas dish are simple the result is impressive, with tender mushrooms richly flavoured with garlic and olive oil. Have lots of bread neat you to soak up all those delicious juices.

600g button mushroom, small ones clef whole and larger ones halved or quartered
3 tbsp extra virgin Spanish olive oil
3 garlic cloves, finely chopped
3 tbsp parsley, finely chopped
maldon salt and freshly ground black pepper
Mushrooms: Heat the oil in a large saucepan over a moderate heat. Add the mushrooms, garlic and parsley to the pan and cook them for 2-3 minutes, so the mushrooms are tender. Season mushrooms with a little salt and pepper. Serve
To Serve: Serve the mushrooms in earthenware dishes or similar bowl as part of a selection of tapas.
