Wontons with Mincemeat and Brandy Ice-Cream

Mincemeat in Wantons with Icecream

This is an easy dish to prepare and is refreshingly different to traditional christmas pudding. The ice cream can be prepared well inadvance or if you don't have the time just buy your favourite flavoured ice cream. Wontons can be purchased from most East Asian grocers either fresh or frozen.

Ingredients

Wontons

  • 60 wonton skins
  • 350-400g mincemeat
  • Oil For Deep Frying

To Serve

  • Icing Sugar
  • 200-300g Brandy Ice-Cream or shop bought

Method

  1. Wontons: Lay out half the wontons on a work top. Place a teaspoon of the mincemeat in the centre of each wonton. Dampen arounf the edges of the wontons with water and place the other half of the wontons on them and press around the edges so as to seal in the filling. If you wish you may cut the wontons int circles or another shape such as stars with a biscuit cutter. Place the wontons on a floured board or container, cover them and refigerate until ready to cook.
  2. To Cook: Heat some oil in a deep fryer, large saucepan or wok to 180-190C (a cube of bread will float to the top and be golden when placed in it). Cook the wontons a few at a time and drain them on kitchen paper. Keep them warm as you prepare them.
  3. To Serve: Place 5 wontons aroud each plate or bowl, place a scoop of ice-cream in the centre of each plate and sprinkle icing sugar over the wontons. Serve.
