Pineapple makes delicious drinks that take very little effort to prepare. Both these drinks are of the non alcoholic variety but by simply adding a little good quality dark or white rum to them you have yourself a tasty intoxicating creation.

Ingredients
Pineapple Crush
1 large pineapple peeled, decored and roughly chopped
juice of 1 lemon
250ml water
100g caster sugar
Spiced Pineapple Drink
1 large pineapples peelings plus core or any other scraps you have from a pineapple
5 cm piece of ginger, roughly chopped plus its peelings
1.2 litres of boiling water
100g caster sugar
Method
Pineapple Crush
Place the chopped pineapple with its juice in a food processor or blender and puree it until it is smooth. If the food processor is large enough add the remaining ingredients and puree them until well combined or place the pureed pineapple in a container and mix the remaining ingredients in well until they are well distributed. Serve the drink with plenty of ice or refrigerate it in a sealed container until ready to serve, giving it a vigorous mix or shake before serving.
Spiced Pineapple Drink
Place the all the ingredients in a container giving them a brief stir so that they are well distributed. Cover the container and leave the drink to infuse overnight or for at least 6 hours. Strain the drink and taste it if you think it needs sweetening add a little more caster sugar. Refrigerate the drink and serve it cold with plenty of ice.
