These canapés are easy and quick to prepare but look and taste impressive. You can simply slice the cucumber or you can cut the slices into shapes using small shape cutters eg. stars, hearts and fluted cutters.

Ingredients
Cucumber and Smoked Salmon Canapés:
1 cucumber, ends trimmed and cut into slices around .5mm thick
250g crème fraîche or sour cream
300g smoked salmon
1 small jar of salmon roe (caviar)
Method
Canapés: Place a small slice of smoked salmon on each cucumber slice followed by a teaspoon of crème fraîche or sour cream. Using a small knife finish each canape with a small amount of salmon roe. Serve.
These can be prepared up to an hour in advance and stored in the refrigerator.
