craving more. An excellent accompaniment to a tapas combination or scrumptious just
served on its own with plenty of bread to mop up the sauce.

Ingredients
olive oil
360g raw prawns, peeled and deviened
3 chorizo sausages (fresh), chopped into 1cm thick slices
1 tsp chilli flakes
2 garlic cloves, finely chopped
4 plum tomatoes, finely diced
maldon salt and freshly ground black pepper
3 tbsp finely chopped flat leaf parsley
Method
Prawns and Chorizo
Heat the oil in a medium frying pan over a moderate high heat. Add the chorizo
and fry for 2-3 minutes until slightly crispy on each side.
Stir in the prawns, chilli and garlic and sauté for a further 2 minutes,
stirring occasionally to avoid the garlic burning, until the prawns are just
cooked.
Add the tomatoes and leave to simmer for 5-10 minutes until the tomatoes have
broken down to a sauce like consistency. Stirring regularly. Season with salt and
pepper to taste
To Serve: Place in a bowl or individual ramekins. Scatter over the parsley.
Serve with a tapas selection or bread as a starter or light meal.
