Greek Salad

Greek Salad makes an excellent accompaniment to grilled meat and fish. The salad should be prepared just before serving.

  • 1/2 red onion, peeled, halved and finely sliced
  • 1 large cucumber, seeded, peeled, quartered and sliced
  • 5 medium, ripe, firm tomatoes, roughly diced
  • 200g goat feta, cubed
  • 100g kalamata olives
  • 1 tsp dried oregano
  • pinch maldon salt
  • 50ml red wine vinegar
  • 100ml extra virgin olive oil


  1. Lightly toss onion, cucumber, tomatoes, feta and olives together in a salad bowl. Sprinkle over the oregano and salt
  2. Whisk together the vinegar and oil so well combined. Dress the salad, toss the salad and serve immediately.
